– We’re looking forward to it, even if the pulse is a bit pulsating at the moment, says Olivia’s opening director Matthias Bjartveit.

The restaurant has a great selection of Italian dishes and one thing is really clear:

– Here you will get the best pizza served outside of Italy.

Olivia Ramsalt Training Courses

All of Olivia’s restaurants are inspired by different cities in Italy, and Bodø’s version took inspiration from the coastal city of Sorrento. Therefore, you will also find local specialties from here, and dishes not found on the menu anywhere else in Norway.

Gnocchi alla Sorrentina is a real classic. Gnocchi with san marzano tomato sauce, mozzarella, basil and parmesan cheese. Mozzarella in Carrozza is another dish typical of the southern Italian region. Fried mozzarella cheese with tomato sauce.

Oliva is the place that is characterized by loose necklines and dropped shoulders. Here you can have a beer with the guys, a wine evening with the girls, celebrate a birthday, meet for a romantic dinner or an inspiring business lunch.

– We have a small living room with 18 seats and a semi open room for 12 for those who want to sit a bit more private – perfect for birthday celebrations or as a meeting room outside the four white walls of the office.

the right people

There are currently 26 employees in place, but when the rest of the restaurant opens with outside seating facing the sidewalk in May, and we have entered peak season, there will be between 40 and 50 people working in a restaurant with a total of 148 seats. Today, people from 10 different countries work, so the environment is truly international.

    The big day: - For us, it's great to be able to offer Olivia's Menu to Bodo residents.  We know that this is the food that everyone really appreciates, say Matthias Bjartveit and restaurant manager Martin Davidsen.

– We’ve put a lot of emphasis on hiring the right people, because it’s about creating a good atmosphere. At the bottom, of course, is quality food and drink, but we also totally rely on knowledgeable, attentive staff who enjoy what they do, says Bjartveit.

Burning passion

Passion for Italian cuisine and culture is Olivia’s heart. Thus the extensive wine list consists only of Italian wines – from all over the country. You’ll also find details like Italian soft drinks as well as Italian ingredients that Olivia imports herself—everything from pizza flour and ham to pasta and tomatoes.

Then Oliva took into account that they are now in Bodø and so you can order “Frittura di lingue di merluzzo” which is fried cod tongues with aioli and “Stoccafisso”; Italian style grilled dry fish with potatoes, celery, tomatoes, olives and capers.

Coastal Town: It had to be an Italian seaside town that provided the inspiration for a restaurant in Bodo.  Sorrento, with its steep mountains facing the sea and plenty of seafood, has become.  Pictured here on Olivia's wall.

In terms of prices, the restaurant has settled on a moderate level where it should be quite possible to find a good main course for under NOK 250. And gnocchi, for example, costs no more than NOK 189.

Good lunch offer

Thursday, Friday and Saturday the hours of operation will be from 11 am to 11 pm. The rest of the week, it will be from 11 am to 10 pm. That means Olivia Ramsalt is open for lunch every day, a welcome offering in the provincial capital.

Bjartveit himself was actually going to be a graphic designer, but a job as a waiter along with his studies led him to work at Olivia’s. He has been involved in opening restaurants in Bergen and Leicester.

Light and Warm: Olivia has lower shoulders and a warm atmosphere as the fireplace and gentle lighting create an atmosphere.

At the moment, Bodo is his main focus, and Biartveit predicts he will stay here well into the summer or fall.

Allowing people to be involved in creating good experiences for guests is something that gives energy every day. When we also have a motivated staff team that thrives on business, it couldn’t get any better.
