The star chef is retiring from one of his Michelin restaurants

Restaurant founder Esben Holmboe Bang is stepping down as owner of Michelin restaurant Mon Oncle in Oslo.

It is Dimitri Veith who takes over ownership of Mon Oncle, now that Holmboe Bang itself is withdrawing.

Veith is currently the head chef at Mon Oncle, and has long worked with Homboe Bang, including first at Maaemo.

– My experience is that those who stand in the restaurant every day are the ones who should own and take responsibility for the experience that guests have when they walk through the doors. Being able to take care of guests for a few hours of normal everyday life and a world that is constantly evolving in so many ways, is a big and beautiful responsibility, and one that I feel Dimitri deserves and masters,” says Holmbo Pang.

Holmboe Bang previously said he wanted to maintain 100% focus on Maaemo and EHB in Shanghai, so he chose to pull out of everything else.

Opened in 2022, Mon Oncle was awarded a Michelin star in the 2023 guide.

– I am deeply honored to take over from Mon Uncle, and to have the trust of the Espen teachers. I have great respect for Espen and his vision, and feel very obligated to maintain the culinary excellence he created at Mon Oncle, says Faith, who acquired the company.

Holmboe Bang recently resigned from his position as owner of several restaurants, including Kafeteria August and The Vandelay. The reason is that he wants to focus on Maaemo and EHB in Shanghai.

– It’s a simple decision, but of course it’s also sad. After all, I only have 24 hours in a day, and at some point you have to decide what you’re happy to do with those hours, Holmboe Pang told VG after quitting The Vandelay.
